Leave two packages or (2 cups) of cream cheese out of refrigerator for two or three hours.
Smash or process with food processor one shelve of graham crackers or about (1 1/2 cups) finely ground.
Add to graham cracker flour, 1/4 cup of powdered sugar and 1 tsp of salt.
In a pie pan melt 5 1/2 T of butter in oven set to warm or 100 degrees Fahrenheit.
When butter is melted add graham cracker mixture to pan and stir around with fork.
When butter and graham cracker mixture is well blended smash down crust.
Put crust aside.
In separate bowl whisk together 2 eggs and 1 tsp vanilla, put aside.
In another bowl add 2/3 cup of sugar and mix cream cheese into sugar with a hand pastry blender until sugar is evenly distributed throughout the cheese.
Now add egg mixture to cheese and sugar mix and stir until blended.
At the point it starts to look like a cheesecake somewhat.
Pour cheese batter into crust insert into oven heated to 350 degrees Fahrenheit for 30 minutes.
Let cool and refrigerate for several hours before serving.
Making granola is easy and tastier than their premade counterparts.
The following recipe is not hard as a rock and does not contain corn syrup which is hard to avoid in virtually all food sold in the US.
In a bowl stir together:
1 1/2 cups of steel cut oats (not instant or minute)
1 1/2 cups of crispy rice cereal
4 T flax seed flour (optional)
Use some butter to grease a pan you intend to use for the finished granola.
In a saucepan set on low melt:
3 T butter
3/4 cup to 1 cup of peanut butter
1/2 cup honey
Be cautious not to scorch mixture, basically melt these ingredients.
Add the grains to peanut butter mix and stir around.
Press granola into pan add some chocolate chip pieces into the top.
Refrigerated for at least an hour before eating.
Usually keep these refrigerated but they do fine without.
Adding some nuts to the mix would be tasty as well.
Sometimes bananas get a little ripe too ripe to enjoy eating plain or in juice. Fortunately ripe bananas, when they begin to get black speckles and increase in aroma is the perfect time to use in banana bread.
Begin by bringing 5 tablespoons of butter to room temperature.
When butter is soft start the oven at 350 degrees.
In a bowl mix:
3/4 cup sugar
1/4 tsp salt
1 tsp of baking soda
Then creme the softened 5 T of butter with sugar mixture.
In separate bowl beat :
1 tsp vanilla
On a plate smash 3 ripe bananas with a fork.
After smashed add bananas to sugar mixture and mix a bit.
Add egg mixture to the banana / sugar mix.
Now add 1 1/2 cups of flour and mix well.
Pour liquid batter into one greased bread pan.
Bake at 350 degrees for an hour.
Enjoy freshly baked bread with a nice hot cup of coffee.
Good stuff,cornbread goes well with chili leftovers. Use real butter to grease the pan its cooked in you will be glad ya did. Use a 9inch pie plate if you have such a thing. Cooking with Aluminum free baking powder is also for the good. I suggest using Rumford brand if ya can find it at your local store.
Heat oven to 400 degrees.
Grease 9 inch pan with butter.
In a bowl add :
1/4 cup peanut oil
1 cup whole milk
Blend well with egg beater.
In a different bowl add:
1 1/4 cup unbleached flour
1 T sugar
2 tsp baking powder
1/2 tsp salt
Mix with pastry blender.
Add your liquids to the dry ingredients and stir until mixed.
Pour into 9inch pan that has been greased with real butter.
Bake at 400 degrees until done.
